Tex-Mex Chicken Roll-Ups

Introduction

These are easy to fix and good nutritionally. You can prepare this dinner quickly and satisfy everyone. I served it with refried beans on the side. I used chipotle hummus once and another time olive oil and garlic hummus. Both were good. To save on calories, use 1/8 an avocado instead of 1/4 as in the recipe. You could also eliminate the chicken if you prefer a vegetarian dish or to further reduce calories. These are easy to fix and good nutritionally. Ingredients

    4 Tbsp chunky salsa
    3 oz. canned Chicken Breast chunks, drained
    2 Tbsp hummus (any flavor)
    1 whole wheat tortilla, 8-inch
    1/4 avocado, diced
    2 Tbsp shredded Mexican-style cheese
    1/4 - 1/2 C Iceberg lettuce, chopped
    1 Tbsp cilantro or parsley

Directions

Spread hummus over the tortilla. Heat chicken and salsa and spread over the hummus. Sprinkle the avocado, cheese, lettuce, and cilantro over all. Roll up, slice in half, and serve.

This makes one serving.
