Stove-top Mac and Cheese

Introduction

Diet food - not quite - it IS mac and cheese! Compared to the original, much healthier, and if you can control portions, not that bad. For a mac and cheese that isn't baked, this is really good. Number of Servings: 8

Ingredients

    16 oz cavatappi or pasta of choice
    16 oz bag frozen 3 peppers and onion mix
    1 Tbsp butter
    12 oz can non-fat evaporated milk
    2 large eggs, beaten
    1 tsp dry mustard
    1/2 tsp red or cayenne pepper (to taste)
    1 Tbsp rosemary
    1/2 tsp salt
    4 oz colby jack cheese
    2 oz sharp cheddar cheese



Directions

8 1-cup servings
In large pot, boil pasta, drain in colander.
Saute pepper and onion mix until the extra water cooks out. Add pasta back to pot. Add butter, spices, evaporated milk and eggs. Cook over medium heat. Add cheese, stir constantly as it melts. Continue to cook, stirring constantly, until the sauce thickens. This will take a few minutes, but is worth the wait.
