A delicious filling soup that you can blend smooth with an emmersion blender or leave chunky. I serve this with a whole grain baguette and then fruit for dessert. Number of Servings: 8

Ingredients

    4 Cups - Pacific Natural Foods Organic Low Sodium Vegetable Broth
    3 Cups - Cubed Yam
    3 - Medium Carrots, chunked
    6- Baby Red Potatoes, halved (about 1-1/2 pounds)
    2 - Cloves Garlic minced
    1/2 teaspoon - Celery Seed
    4 - Green Onions chopped
    1 Tablespoon - Dried Parsley
    Sea Salt and Fresh Ground Pepper to taste

Directions

Put all ingredients In your favorite soup pot and cook until veggies are tender. Add water if necessary. Blend smooth with an emmersion blender or leave chunky, or do what I do and take a little bit less than half out of the pot and blend it and then add it back in.
