Introduction

Fresh Zuchinni, Squash, and Mushrooms make this wonderfull. Fresh Zuchinni, Squash, and Mushrooms make this wonderfull.
Number of Servings: 6

Ingredients

    1 Large Zuchinni
    1 Large Yellow Squash
    1 pkg. Mushrooms
    1 small onion
    1 can No Salt Diced Tomatoes
    1 clove garlic
    1 Tbsp Oregano
    2 Tbsp olive oil
    salt and pepper to taste.

Directions

Slice Zuchinni, squash, onion, and mushrooms.

Heat olive oil in large skillet. Add onion and garlic. cook until onino is transparent. Add vegetables and can of tomatoes. Stir to blend. Add oregano, salt and pepper. Cover with lid and cook 10 min to let flavors blend.

Makes 6: 1 cup servings.
