Ingredients

    1 cup canned sweet corn
    1/2 cup sweet red pepper, chopped
    1/4 cup scallions, chopped
    1/2 tblsp dried parsley
    2 tblsp balsamic vinegar
    1/2 tsp olive oil
    1 tsp honey

Directions

Cook the corn as directed on the can in a medium sauce pan. Add remaining ingredients stir and serve. Serving size about 1/3 of a cup.

  • I mae this recipe for my grandfather who doesn't like to eat his vegetables. He ate all. I added broccoli and used canned creamed sweet corn so that it was slightly camoflauged in taste for him. It worked out great. Will make again and use regular sweet corn to see if there's a taste difference. - 4/29/09
