Quiche Lorraine

Ingredients

PASTRY:
6oz plain flour
pinch salt
3oz margarine
3 tablespoons water
FILLING:
1 tablespoon sunflower oil
1 small onion chopped finely
4 rashers lean bacon chopped
half pint milk
3 medium eggs
2oz cheddar cheese
salt and pepper
Directions
1. Preheat oven to 190oc/gas mark 5
2. Sieve flour and salt into a bowl, add the margarine and rub into the flour and salt until the mixture resembles breadcrumbs, add 3 tablespoons cold water and mix to a pastry dough. Roll out the pastry dough onto a lightly floured surface to line a 9 inch quiche dish. Line the dish with the pastry dough and put in the fridge.
3. Heat the tablespoon of oil in a frying pan and add the onion and bacon and cook until the onion is transparent, take off the heat and leave to cool.
4. in a jug measure out the milk and add the eggs and seasoning and beat with a fork. Grate the cheese into a separate bowl.
5. Take the quiche dish from the fridge and spread the onion and bacon mixture over the base of the dish, sprinkle half of the cheese over the top and pour in the milk and egg mixture, sprinkle the remaining cheese over the top and bake in the centre of the oven for 40-45 minutes until golden brown. Serve hot or cold and serves 6 dinner size pieces.
