Classic Soji Bhakri

Introduction

Number of Servings: 5

Ingredients

    Soji / Crem of wheat, 1 cup
    Water, tap, 2 cup (8 fl oz) warm
    Coconut, raw, 1 cup, shredded
    Jalapeno Peppers, 2 peppers or green chili peppers, Indian chopped.
    Cilantro, raw, 2 tbsp, chopped
    Desi natural dahi lowfat yogurt 1.5% milkfat plain; 1/4 cup
    Ginger Root, 1 tsp shredded
    *Flour, white, 2 tbsp. for binding purpose.

Directions

Mix all the ingredients to blend well. This is the batter. On a pan that has a bit of grease from prior use ( or use Pam) spread the batter gently to make a thin ( compared to American pancakes) round. Cover tight, lower the heat and let cook for 30 seconds. Remove the cover, spray Pam on the edges and push it beneath the pancake to make it crispy. Spray some on top too. When the pan cake is slightly browned, turn over and brown the other side too. Serve hot. Will make 5 pancakes ( about 10" wide) enough for 2 big appetites or for 2 1/2 servings.
