Turkey Enchilada Burgers

Ingredients

    1 lb lean ground turkey
    1 can black beans
    1 can corn
    2 cups cheddar cheese
    1 can enchilada sauce
    1 pkg taco seasoning

Directions

Brown turkey with taco seasoning. Drain and rinse beans and corn. Add to turkey. Add enchilada sauce and cheese. Stir well. Put 1/3 cup on top of 1/2 of a hamburger bun and toast or broil until cheese is melted.

  • Awesome! Loved it! Didn't mix the cheese in, just sprinkled on top before I put under the broiler. Otherwise followed recipe. I used 2 c. of black beans I soaked and cooked rather than the canned beans to cut down on sodium. Everyone loved! Will defintely make again! - 6/3/11

  • I did a little something different, inspired by this recipe, I grilled a turkey burger and topped it with a mix of the black beans, corn & enchilada sauce with taco seasoning mixed in. Then I topped that with 2 tbsp. grated cheddar cheese. Yummy! add a side of whole grain tortilla chips. Great meal! - 5/18/11

  • Made this last night. Doubled the turkey, added extra chili pepper to taste and left cheese out. Got 16 1/2 c. servings. Served 1/2 c. on bun half topped with 1/4 c. fat free cheese for a total of only 216 calories. Was a HUGE HUGE hit! Frozen mix reheats well. Thanks for sharing this recipe! - 6/11/09
