Adaptation of "big fat blueberry muffins" from Hungry Girl

Number of Servings: 18


    1 cups whole wheat flour
    1 cup Fiber One, ground into flour
    2 cups fresh blueberries (I used blackberries b/c they were on sale)
    1 cup light soymilk (I used unsweetened almond milk, again, b/c it was what I had)
    1/2 cup sugar free maple syrup
    1/2 cup liquid egg white substitute
    1/2 cup splenda
    6 tablespoons brown sugar (I used part brown sugar substitute)
    4 tablespoons light whipped butter
    4 tablespoons unsweetened applesauce (I had the serving size mott's plus fiber unsweetened applesauce, cranberry-raspberry, so used one of those for the applesauce and butter)
    3 tsp baking powder
    1 tsp vanilla extract
    1/2 tsp salt


Mix dry ingredients

Mix wheat ingredients until smooth

Add dry ingredients to wet and mix until completely blended. Fold in berries. As is, makes 6 large muffins. Bake at 400 degrees for 20 minutes or until toothpick comes out clean.

  • i just bought the "hungry girl 200 under 200" cookbook, and i'm planning on making these tomorrow, but my question is regarding the fibre 1 - is it one cup before grinding or one cup after grinding? and how did you get 18 servings if it makes 6 big muffins? thanks! - 5/24/09

    It was one cup after grinding on the fiber one...and I made 18 muffins, so the amount in the recipe in the cookbook is 6 very big muffins or around 10 normal size and I made 18 mini muffins...
