Introduction

Delicious, the feta gives tons of flavor without many calories. Quick and easy. I eat this as a one serving main dish, fills an entire plate. Could easily be used as a side and serve 2-3 people. Use any combo of vegetables you like, would be great with mushroom, egg plant, yellow squash, etc etc etc Delicious, the feta gives tons of flavor without many calories. Quick and easy. Ingredients

    Cooking Spray
    1 Pepper sliced (green, red, or yellow)
    1/4 Onion, sliced
    1 Stalk Celery sliced
    1/2 medium zucchini sliced
    1/2 cup sliced carrots
    1 clove garlic minced
    1/2 oz feta cheese, apx 1 tbsp
    salt/pepper (optional)


Directions

Heat up a large frying pan, spray with cooking spray.
Throw in the vegetables, and garlic, saute until tender. Transfer to plate, sprinkle with feta. Feta will melt slighly on the warm vegetables.
Eat! Yum!
