Ingredients

    1 zucchini - sliced
    2 carrots, sliced
    1/4 onion, sliced
    1 cup broccoli
    2 tbsp Yogurt, plain nonfat
    1 tsp lemon juice
    1 tbsp Smart Balance Buttery Spread

Directions

Heat Butter Spread in pan, add onion and carrots, cook until the tenderness you prefer, add zucchini and continue to to cook. Add broccoli. Add 1/4 teaspoon lemon juice to veggies. Mix remaining lemon juice with yogurt. Pour over veggies just before finished cooking. Stir well. Approx. 1 cup per serving.
