2 large zucchini, 400 grams
2 large onions, raw
4 tbsp olive oil
5 cups water tap
4 tsp salt
Slowly bring to boil while preparing vegetables.
Chop zucchini and onions in 2 inch pieces.
Add to soup pot and bring back to boil. Cook until tender (about 15 minutes).
Add the olive oil.
Put in a food processor or blender & puree.
Serve with salt to taste.
