Vita Mix Veggie soup

Ingredients

    Note: Sodium content given is higher than actual if ingredients used as specified.

    1/4 cup canned peas - washed 2x w/ cold water, drained
    1/4 cup canned kidney beans - washed 2x w/ cold water, drained
    1 cup diced tomatoes (no salt added)
    1/4 cup celery
    1/4 cup carrots
    1 tablespoon bell pepper (green or red ok)
    dash onion powder
    1 cup low sodium chicken broth
    1/2 teaspoon worcestershire

    Tofu, if desired.

Directions

Do not attempt as instructed in a blender other than Vita Mix. Maybe blending the ingredients and heating in the microwave would work?

Place all ingredients except tofu in Vita Mix. Set variable speed to #1 and turn quickly to #10, then to HIGH. Run for 5-6 minutes until soup is hot. Turn to variable speed 3 and drop in tofu, run for a few seconds just until chopped. Serve immediately.

Serves 1 as a main dish or a few appetizer servings.
