Tikka Chicken

Introduction

A low fat ,low KJ meal. very tasty with a hot flavour not from curry. A low fat ,low KJ meal. very tasty with a hot flavour not from curry.
Number of Servings: 4

Ingredients

    2 chicken breasts skinned
    juice of 2 lemons
    4 cloves garlic crushed
    2 tbsp fresh ginger grated
    1tbsp grd cumin
    1 tbsp grd coriander
    1 tsp salt
    1/2 to 1 tsp chili powder
    1/2 to 1 tsp paprika
    1/2 cup low fat natural yoghurt
    Olive oil to spray, grease tray.

Directions

1. Cut chisken up into bite size pieces and place in a non metalic dish. Squeeze lemon juice over and put in fridge for 30 mins.
2. Place remaining ingrediants except yoghurt in a processor. Blend to a smooth ppaste.
3. mix paste with the yoghurt and use this to coat the chicken evenly. ( I dry the chicken from the lemon juice first with a paper towel)
4. preheat oven to 190C
Place chicken on a lightly greased baking dish and bake for 25 to 30 mins, until chicken is tender and cooked through.

Serve this on a bed of rice & v eges or salad of your choice.
