MamaJ's Micro Omelet

Introduction

I fixed eggs for the boys, plain scrambled and I was hungry for a real omelet, so I just microwaved some with goodies for my self. I fixed eggs for the boys, plain scrambled and I was hungry for a real omelet, so I just microwaved some with goodies for my self.
Number of Servings: 1

Ingredients

    1 egg
    dash pepper
    8 spinach leaves chopped
    2 tab chopped onion
    1 tab chopped cilantro
    1 tab red bell pepper
    1 tab picante sauce
    1/8 cup shredded colby-jack cheese

Directions

This only makes one serving.
Combine all ingredients in a microwave bowl. Cook 30 seconds, stir, cook 30 seconds, check to see if done. Continue 30 second, don't over cook, should be a little damp but not runny. Remember the egg will continue to "cook" after you take it out of the microwave.
