Mashed Cauliflower

Ingredients

    1 Head Cauliflower
    1/2 cup Skim Milk
    1 Tbsp Unsalted Butter
    Pinch of Nutmeg

Directions

Bring a pot of salted water to a boil. Chop the cauliflower into roug pieces and add to the boiling water. Cook the cauliflower till tender. Drain it into a colander, return it to the pot,and then mash it with a fork or potato masher. (For a smoother texture puree the cauliflower in a blender or food processor) Stir in the milk, butter, and nutmeg. Salt and pepper to taste.
