Shrimp Cocktail Salad

Introduction

This is a great replacement for Shrimp Cocktail
- adding Avocado cubes would be great too.

Number of Servings: 10

Ingredients

    Chop Small
    2 stalks of celery
    1 small cucumber
    1 small zucchini
    1 small Red Onion
    2 Green Onions
    Roma or Cherry Tomatoes

Directions

Cook & Chill 1 lb of raw peeled, deveined, tail off shrimp (I buy mine this way) until pink

Mix Lime Juice, Olive Oil (equal parts)
Add 3 chopped cloves of garlic

Toss all together w chopped fresh Parsley
Keep Chilled until serving
