Super AWESOME Veggie Burritos

Introduction

I love these quick-fix veggie burritos!! They're easy to make, and delicious!! Feel free to use any combination of vegetables! I love these quick-fix veggie burritos!! They're easy to make, and delicious!! Feel free to use any combination of vegetables!
Number of Servings: 4

Ingredients

    1 pound of veggies, chooped
    4 slices soy cheese (preferably cheddar)
    2 cups fat free refried beans
    4 large tortillas
    a spray of olive oil
    fajita seasoning

Directions

Heat up a skillet on medium-high heat. While skillet warms, chop your veggies into bit-sized pieces. Spray the skillet with olive oil, just enough to coat the bottom. Add your veggies, stir frequently. Add a dash of fajita seasoning. While the veggies cook, heat up your beans. Once the veggies are done to your satisfaction, you're ready to build. Take 4 tortillas, spread 1/2 c beans on each, add 1 slice soy cheese, then top with 1/4 of the veggies. fold the ends in, and roll to close. Serve on a plate, seam side down. SUPER YUMMY!
