Ingredients

    3 large Eggs
    2/3 cup skim milk
    1/3 all purpose flour
    1/3 whole wheat flour
    1/2 tsp italian seasoning
    1/8 tsp salt
    1/2 tbsp butter
    ---------------------------------
    1 tsp Olive Oil
    4 slice Turkey Bacon
    8 gram Gorgonzola, crumbled
    6 spears Asparagus
    10 fresh Mushrooms, sliced
    2 cup Spinach, fresh

Directions

You can use 1 10-inch cast iron skilled or 2-8 inch ones. If you use the two 8" ones, cut your baking time to 15 minutes.

1. Put skillet(s) on middle rack of oven and preheat oven to 450°F.
2. Beat eggs with an electric mixer at high speed until pale and frothy, then beat in milk, flour, italian seasoning, and salt and continue to beat until smooth, about 1 minute more (batter will be thin).
3. Add butter to hot skillet(s) and melt, swirling to coat. Add batter and immediately return skillet(s) to oven. Bake until puffed and golden-brown, 18 to 25 minutes. (15 if using 2 smaller skillets). Note that this will not puff up a great deal due to the whole wheat flour.
4. Sautee turkey bacon, gorgonzola, asparagus, mushrooms & spinach in olive oil until tender while the pastry is baking.
5. Serve immediately, topped with veggie sautee.
