Oriental Chicken and Barley Soup

Ingredients

    Barley, pearled (ten minute cooking time) 1 cup
    Carrots, cooked, 2 cup slices
    Celery, cooked, 2 cup, diced
    Mushrooms, fresh, 2 cup, pieces or slices
    Garlic, 2 tsp
    Chicken Broth, low salt, 8 cups (8 fl oz)
    2 cups of water
    Soy Sauce, low salt 2 tbsp
    Green Onions, 4


Directions

While the chicken broth and water is cooking, take the garlic, celery, and carrots, and microve for three minutes, or saute on the stove with a tsp of olive oil. for ten minutes. Bring to boil the chicken broth, and add barley. Let cook for ten minutes, or until barley is soft. Add the sauted vegetables, and then add 2 cups of mushrooms and diced green onions to the chicken broth. Prior to serving, add the 2 tbsp. of soy sauce. Makes 12 1 1/2 cup servings.
