southwest stuffed bell peppers

Introduction

1 half of a bell pepper is one serving. 1/2 cup of meat mixture per pepper halve. 1 half of a bell pepper is one serving. 1/2 cup of meat mixture per pepper halve.
Number of Servings: 10

Ingredients

    16 oz. of ground turkey
    1/2 onion, large
    5 bell peppers, large, halved
    3 tbsp black olives
    1 4oz can green chilis
    1/2 cup black beans
    1/2 cup corn
    1/4 tsp garlic
    6 tsp. Mrs. Dash salt free southwest chipotle
    1/4 tsp cumin
    1 1/2 cup 2% shredded cheese taco flavor

Directions

slice bell peppers in halve and remove seeds.
cook instant rice as directed
cook ground turkey, onions, black olives, garlic, chilis, corn, black beans
add seasoning and cumin
add 1/2 cup of mixture to each pepper halve
put water in bottom of a pan
place peppers in pan and cover with aluminum foil
cook @ 350 degrees until peppers are soft
uncover top with cheese cook until melted
