Hungarian Chicken Paprikas

Introduction

This is a Hungarian dish that is very easy and tasty. Can be served with whole wheat noddles, rice or if you want to slurge a little cook some frozen perogies. Number of Servings: 4

Ingredients

    1 Green Pepper, diced
    1 Onion, diced
    2 cups (1 8oz package) Mushrooms, sliced
    3/4 Chicken Broth
    2 Tbls Olive Oil, Extra Virgin
    1-2 Tbls Tomato Paste
    4 Chicken Breast boneless, skinless (approx. 4oz each)
    2 Tbls Reduced Fat Sour Cream
    2-3 Tbsp. Paprika

Directions

Dice green pepper and onion. In a large pot add oil, onions, peppers and mushrooms. Sautee until golden brown. Remove from burner and add paprika, tomato paste and chicken broth. Season to taste with salt and pepper. Mix well. Add chicken. Mix well until sauce covers chicken. Cover and simmer approx. 30 mintues or until chicken is tender. Remove chicken, add sour cream and mix well. Return chicken to pot and bring to a gently boil for 3 minutes.
Serve with whole wheat noodles or perogies.
