Mediterranean Turkey Tacos

Introduction

Ingredients

    1 Tbsp extra Light Olive Oil
    1.25 lbs Jennie-O Extra Lean Ground Turkey
    2 cloves of garlic, minced
    1/2 cup red onion; finely chopped
    2 Tbsp chopped fresh oregano
    1.25 cups chopped fresh baby spinach
    1/2 cup alfalfa sprouts (optional)
    1/2 cup chopped raw cilantro
    2 medium tomatoes; cut to wedges
    5 whole-wheat Greek flat bread
    1/2 cup crumbled feta cheese
    To taste: all purpose Greek seasoning
    To taste: beef grill seasoning

Directions

Heat olive oil in frying pan; add garlic and onions for 1-2 minutes of medium-high heat. Add turkey and spices; cook through over medium heat. Add chopped oregano and reduce heat to Lo.

Pop flatbread into microwave for 50-60 seconds to soften.

Serve turkey mixture in folded bread and top with tomatoes, spinach, sprouts cilantro and a sprinkle of feta cheese.

Serve with a Tbsp of *light sour cream and some *Kalamata olives on the side, if desired. (*Not included in calorie count).

The only other thing I'd add next time is chopped cucumber!
