Crunchy Baked Fish for Tacos

These yummy (slightly spicy) fish pieces are really good in tacos. Would probably be good as a whole fillet, too! These yummy (slightly spicy) fish pieces are really good in tacos. Would probably be good as a whole fillet, too!Number of Servings: 23
Ingredients

1/3 c. mayo (I used regular, but you could use light)
1 1/2 T. chipotle peppers in adobo sauce, chopped
dash of Tony's
2 lb. tilapia fillets, cut into 2-inch pieces
1 box panko crumbs
Directions
Combine first 3 ingredients in food processor, and blend until smooth. Combine fish pieces and sauce in bowl, and toss to coat. Dredge in panko crumbs until coated. Put on cookie sheet coated in cooking spray (You may need 2 pans.), and roast at 475 degrees until golden and flaky, about 20 minutes.
