Whole Wheat Cheddar Apple SconesSubmitted by: STARLITSHADOWS
2 c. whole wheat flour
3 tsp baking powder
1/2 tsp salt
2 tbsp butter
1 1/4 c. Milk ( I used 1%*)
1 1/4 c. shredded sharp cheddar (full fat, people!*)
1 medium apple, peeled and finely diced
Rub in the butter, do not combine evenly. The pieces of butter make the scones flaky.
Stir in the cheddar cheese.
Beat together the milk and egg in a separate bowl.
Add to dry ingredients along with the finely diced apple and mix until just combined.
Fill a prepared muffin tin with the dough (I got 12 full muffin cups).
Bake at 400 for about 10-15 minutes.
*Note, you could reduce fat/calories further by using skim milk and reduced fat cheese.
