Ingredients

    1.5 lbs boneless, skinless chicken breasts
    1 T jerk seasoning
    2 T reduced-fat sour cream
    1 T lime juice
    1 head Romaine lettuce
    1 cucumber, quartered and sliced
    tomatoes
    1 green onion
    1/4 tsp salt

Directions

Pound chicken into 1/2" thickness, Sprinkle with jerk seasoning on both sides. Refrigerate for at least one hour.

Heat 1 T oil in skillet over medium-high heat. Add chicken and cook 3 minutes each side.

In a large bowl combine sour cream, lime juice and salt. Add romaine, cucumber, tomato and onion. Toss well.
