Introduction

My attempt at a healthy version of peanut butter oatmeal cookies recipe - pretty tasty! To me, they came out a little dry so if someone has any suggestions that would be much appreciated!
This recipe is doubled to make a lot of cookies, so recipe can be halved to make only 25.

Number of Servings: 50

Ingredients

    1/2 c Butter, softened
    1/2 c Yogurt, plain
    3/4 c peanut butter
    2 Eggs
    1 tsp Vanilla Extract
    1 tsp Baking Flour
    2 1/2 c Rolled Oats
    1 1/2 c Whole Wheat Flour

Directions

Preheat oven to 350 degrees. Mix peanut butter, softened butter, and yogurt together. Add two eggs and vanilla extract. Mix well. Gradually add the oats, flour, and baking powder till mixed nicely. Use a small spoon or teaspoon to scoop a nice round dollup of dough on a cookie sheet and bake for 10-12 minutes.
