Green Chile Lentil Loaf

Ingredients

    1 tsp olive oil
    1 large onion, diced
    1 large carrot, diced
    1 small red bell pepper, diced
    1 cup dry lentils
    3 cups water
    6-8 mushrooms, chopped
    1 cup TVP
    1 can roasted green chili peppers
    1 T taco seasoning
    1 T cumin powder
    2 T chipotle salsa

Directions

Pre-heat oven to 350

Sauté onion, carrot and red bell pepper in olive oil until tender. Add lentils and water. Bring to a boil, cover, reduce heat and simmer for 20-25 minutes or until lentils are soft.

Stir in green chili peppers, mushrooms and TVP and let stand for 2 minutes.

Spray 9 x 13 baking pan with non stick spray. Pour mixture into prepared pan and bake uncovered for 30-40 minutes or until all liquid is absorb and top is slightly browned.

Let cool before cutting

Makes 6 servings
