Black Bean Souper

Ingredients

    1 Cup coarsely chopped onion
    2 tsp. (4 cloves) garlic minced
    2 tsp. olive oil
    2 (14oz) cans chicken broth
    1 tsp. lime juice
    1/2 tsp. chili powder
    1 1/2 Cup rotini pasta
    1 (14oz) can diced tomatoes
    1 (15oz) can black beans rinsed and drained

    parsley and grated parmesean to each bowl

Directions

Saute onion and garlic in oil, add broth, lime juice, chilie powder. Bring to boil-add rotini-cover and reduce heat -simmer til pasta is firm. Add tomatoes, beans and heat through . Serve with cheese and parsley if desired.
