Low Fat Honey and Ginger ChickenSubmitted by: ORANGECOWCAT
* 1.5 lbs boneless, skinless chicken breast
* 4 tbsp honey
* 4 tbsp Dijon mustard
* 1/2 cup water
* 2 tbsp freshly ground ginger root
* 4 garlic cloves
**1 tsp cayenne pepper - OPTIONAL**
Depending on the size of your chicken breasts, you may need to slice them in half to make them half the thickness. When I buy my chicken at a deli counter, I need to do this or the breasts are too thick to cook in the amount of time specified. Usually grocery store chicken will be 4-6 breasts for a pound and a half package and these are the correct thickness. When chicken is prepped, place in a baking dish sprayed with non-stick cooking spray.
Mix remaining ingredients in a measuring cup until blended.
Pour mixture over the chicken, easing the breasts up slightly to allow mixture to run underneath them.
Cover with foil.
Bake at 350 degrees for 30 minutes; remove foil. Bake for an additional 15 to 25 minutes until chicken has reached internal temperature of 165 F.
Makes 6 servings (each serving is 4 ounces of chicken)
