mediterranean Chicken Stew

Ingredients

    3 chicken breast cut in half
    salt and pepper
    olive oil
    1 medium yellow onions chopped
    garlic cloves minced
    chicken broth
    italian tomatoes with juice
    4 carrots slice 2/1 inch thick
    14 oz can artichoke hearts (*no marinated) drained
    1 jar olives drained
    capers drained

Directions

Cut each chicken breast in half for a 3 oz portion. Brown the chicken, add all the ingredients and simmer for an hour. Serve over rice.
