Introduction

These are so much better then traditional pancakes. The original recipe came from my boss, I just used almond flour instead of flour. I don't even use syrup. Number of Servings: 4

Ingredients

    2 cups cottage cheese 1%
    2 large eggs
    1/4 cup ground almonds
    1 tsp vanilla extract
    dash salt
    1 tsp cinnamon
    1 tsp baking powder
    1 tsp lemon juice

Directions

Place all ingredient into blender. Blend until smooth. Make pancakes using 1/4 cup measuring cup. Cook on a hot skillet that has been sprayed with non-stick spray. Cook on one side until little bubbles form. Flip and cook for two to three minutes more. The exact number will depend, even if you use a 1/4 cup measure. I divide the total number of pancakes by four.
