Ingredients

    1 cup butter
2 cups farina - raw, not cooked
    3 cups sugar
    1 cup milk
    3 cups water
    2 teaspoons cinamon

Directions

Combine the milk and water in a 2-quart saucepan or bowl with a spout, add the sugar and still until the sugar is completely disolved. Gently melt the butter in a four-quart saucepan and stir in the farina. Using a wooden spoon stir the farina butter mixture constantly over low to medium heat until the farina is golden brown, approximately 1/2 hour. Do NOT let the farina burn. It is important to stir the mixture constantly and over low-medium heat. The mixture will have the consistency of wet sand. When the farina is golden, gently and slowly stir the milk/water/sugar mixture in. Stand back and BE CAREFUL as the MIXTURE WILL BUBBLE UP. Stir this mixture over low heat until the mixture is thickened and leaves the bottom of the pan clean when moved with a wooden spoon. Remove from heat, cover top with a dish towel and the saucepan lid. Let sit 15 minutes. Spoon into a serving bowl and sprinke with cinamon.
