Banana Oatmeal Cookies

Introduction

Number of Servings: 36

Ingredients

    1 1/2 cups all-purpose flour
    1 cup Splenda (for cooking)
    1/2 tsp. baking soda
    1 tsp. salt
    1/4 tsp. ground nutmeg
    3/4 tsp. ground cinnamon
    6 Tbsp. I can't believe it's not butter
    .375 cup applesauce
    1 egg substitute, about 1/4 cup
    1 cup medium mashed ripe banana
    1 3/4 cup rolled oats
    1/2 cup chopped walnuts

Directions

Preheat oven to 400 degrees F.

In a large bowl, sir together the flour, sugar, baking soda, salt, cinnamon and nutmeg. Cut in butter and applesauce until no lumps remain. Stir in the egg and bananas; mix well. Finally, stir in the oats and walnuts. Drop by teaspoonfulls 2 inches apart onto ungreased cookie sheets.

Bake for 8-10 minutes in the preheated oven, or until edges are browned. Remove from pans immediately to cool on wire racks. Makes 36 cookies.
