BBQ chicken pizza

Ingredients

    2.5 cups flour
    1 cup warm water
    2 Tbsp vegetable oil
    1 package active yeast
    1 tsp salt
    1 tsp sugar
    6 Tbsp barbecue sauce
    1 cup cheddar cheese (use low fat to reduce calories, full fat used to calculate)
    1 chicken breast
    1/4 cup red onion, chopped

Directions

Dissolve the yeast in 1 cup warm water. Add the flour, vegetable oil, salt and sugar. Mix until combined. Add more flour if mixture is too sticky. Let stand for 5-15 minutes. Flour your hands and re-knead dough. Let stand another 5-15 minutes. Roll dough onto 2 cookie sheets sprayed with non-stick cooking spray or corn meal. Pre-heat oven to 425 F. Cut the chicken breast into bite size cubes and cook with the red onion. Spread BBQ sauce on the dough, top with chicken and cheese. Bake for 15-20 minutes or until crust begins to get golden brown. Remove from oven and cool. Cut into 8 slices and serve. Enjoy!
