Smothered Bacon Chicken




Number of Servings: 4

Ingredients

    2 large (6 oz.) or 4 small (3 oz.) chicken breasts
    8 slices of turkey bacon
    1 can (10.75 oz.) Cream of Mushroom Soup
    8 oz. fat free sour cream
    1 small onion, chopped
    1/2 c. sliced mushrooms
    1 tsp. garlic

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Sautee onions and mushrooms together with garlic. Set aside.

2. Wrap each 3 oz. chicken breast in 2 strips of bacon and place in a glass 9x13 inch baking dish.

3. In a small bowl, mix the onions, mushrooms, sour cream and soup. Cover the chicken with the sour cream/soup mixture and bake uncovered in the preheated oven for 40 to 50 minutes or until slightly brown on top. Let cool and serve on top of hot, cooked rice if desired.

Makes 4 servings.
