Waldorf Chicken Salad

Tastes like a decadent splurge. Tastes like a decadent splurge.
Number of Servings: 5

Ingredients

    1 cup chopped, cooked chicken
    1/4 EACH OF THE FOLLOWING:
    grated raw carrot
    finely minced red onion
    finely chopped raw celery
    finely chopped apple(Fuji or other medium sweet apple)
    rough chopped walnuts

    3-4 Tablespoons of low fat mayo
    Mrs. Dash and pepper to taste

Directions

Roast and debone a whole chicken, buy a rotessieri chicken at the market, or oven roast 2 chicken breasts.
Makes a lovely brunch served on lettuce leaves, serves 5 to 6.
