Banana Muffins

Number of Servings: 12

Ingredients

    3/4 cup oat flour
    3/4 cup soy flour
    3/4 cup unbleached four
    1/4 cup ground flaxseed
    1/2 cup raw sugar
    4 tsp. baking powder
    dash salt
    1/4 tsp. cinnamon
    3 mashed ripe bananas
    1 cup soy milk
    2 eggs
    1/2 cup oil
    1 cup chopped walnuts
    1 tsp vanilla

Directions

Put eggs, oil soy milk, vanilla and bananas in a blender and mix well. Add banana mixture to dry ingrediants. Add nuts adn put in paper lined muffin cups. Bake at 375 degrees fro 20 minutes. Allow to partially cool in pan. Then finish cooling on rack. These freeze well.
