Introduction

I like to buy a whole chicken and simmer til it's very tender, then freeze 1/2 the resulting broth for another dish, save the breast meat for chicken salad, and use the rest of the meat for this soup. Ingredients

    2 cups cooked chicen
    1 onion, chopped
    1/3 red pepper, chopped
    1 cup chopped leek or scallions
    2 carrots, chopped
    1 cup frozen peas
    4 large swiss chard leaves with stems, chopped
    2 tsp sage
    1 tsp thyme
    1 tsp rosemary
    3 tbsp chopped parsley
    1 cup brown rice
    1 qt chicken broth
    1 qt water
    salt and pepper

Directions

Put everything in the pot and cook til the rice is cooked and veges are tender.
