Kel & Geoff's Curry Beef

Number of Servings: 6

Ingredients

    1 tbsp olive oil
    1 kg rump steak
    1 onion, chopped
    2-3 cloves garlic, crushed
    1 tbsp cumin
    1 tbsp Vegemite
    1/2 small pumpkin, peeled and diced into cubes
    3 large potatoes, diced into cubes
    1 large Kumara, peeled and diced into cubes
    3 tbsps red or green curry paste
    1 can coconut cream
    water as required


Directions

Place oil into bottom of large pot. Add garlic and onion. Cook until softened but not browned.

Add cubed steak. Stir together and simmer a short while.

Flavour with cumin, vegemite, stock cube, s&p if desired.

Let cook for a little while (about 5 minutes or so).

Add pumpkin, potato, kumara (carrots if wanted also).
Stir in together. Cook for another 5 minutes.

Then add curry paste... simmer a few minutes.

Add coconut cream with a little water, if required. Stir together until well mixed.

Cover and let simmer for an hour or so... until veggies have broken down and thickened sauce.

Serve with basmati rice and poppadoms.
