Introduction

I've been trying to eat semi vegitarian and this was just something I threw together to use up what I had in the house. Number of Servings: 5

Ingredients

    about 5 small potatos pealed and chopped lg. chunks OK
    1 can crushed tomatos
    1 can low soduim chicken broth
    about 1 cup dry lentils (I used about 1/2 a bag?)
    about 1/4 cup chunky salsa
    3 sm cloves garlic chopped
    1 slice onion (chopped)
    about 3-4 strips bell pepper (I used red)
    italian seasoning, salt and pepper to taste

Directions

toss all ingredients in the pot close lid and bring to rolling boil for about 1 hr (check to see if lentils and potatos are done.

makes 5 servings
