Easy Creamed Spinach

Introduction

I originally got the recipe off of about.com as a southern food recipe. Changed the milk to skim milk. Original recipe called for two pkgs. of spinach. I tweaked the recipe by adding a little garlic powder and parmesan cheese but you can season to your own taste. I originally got the recipe off of about.com as a southern food recipe. Number of Servings: 4

Ingredients

    1-2 pkg. frozen spinach
    1 cup skim milk
    1/4 cup of flour
    1/4 cup butter
    salt & pepper
    dash of nutmeg
    parmesan cheese
    garlic powder

Directions

Melt butter in top of double boiler over low direct heat. Blend in flour until smooth. Cook until mixture is smooth and bubbly. Gradually add milk and cook, stirring, until thickened. Add spinach. Cover and cook over boiling water, stirring occasionally, 15 minutes. Season with salt, pepper, and nutmeg.
Serves 4.
