nana's rice pudding

    1 cup long grain rice
    2 cup water
    1/4 cup butter
    1/2 cup sugar
    2 tsp. cinnamon
    1 1/2 cup lowfat milk
    1 1/2 cup half and half


Mix rice and water in oven safe bowl cook in microwave until water is absorbed about 15 minutes. Stir in rest of ingredients until butter is melted. Bake at 375 for 45 minutes, take out of oven and let sit for 10-15 minutes until thick. Makes 6 1-cup servings.
