Introduction

Number of Servings: 4

Ingredients

    2 6oz. cans of tuna in water -drained
    1/4 cup mayo
    1/4 cup finely chopped celery
    1 1/2 tablespoons of finely chpped onion
    1 tablespoon chopped parsley
    3/4 tablespoon red wine vinegar
    1 pinch of salt
    1 pinch of pepper
    4 low cal rye bread slices
    8 slices of tomato
    8 slices of swiss cheese

Directions

1. Pre heat oven broiler
2. In a bowl, mix the tuna, mayo, celery, onion, parsley and vinegar. Season with salt & pepper.
3. Place the bread on a baking sheet and broin 1 minute until lightly toasted. Remove and spread with the tuna salad. Place one slice of cheese over the tuna on each piece of bread, layer with a tomato slice, and top with remianing cheese slices.
4. Return to the broiler for 3-5 minutes, until the cheese melts.
