Crustless Breakfast Quiche

Ingredients

    12 eggs
    1/2 cup half and half (or milk)
    1 tbsp Spike Seasoning
    1 cup chopped onions
    2 cups chopped sweet peppers
    2 cups sliced mushrooms
    3 cups diced extra lean ham
    8 oz shredded part skim mozarella cheese

Directions

Preheat oven to 350. Saute 1 tbsp olive oil with the veggies for about 5 minutes. Spray 13x9 baking dish with olive oil spray. Layer diced ham, cooked veggies and then shredded cheese. Beat all of the eggs, the half and half and spike seasoning in a bowl. Pour over meat/veggies/cheese. Bake for 45 minutes. Makes 9 servings.
