IntroductionTraditionally, croquettes are fried, but to save fat and calories, I choose to bake/broil them. :) Traditionally, croquettes are fried, but to save fat and calories, I choose to bake/broil them. :)
2 boneless, skinless chicken breasts - cooked and shredded
1/2 C kraft 2% shredded sharp cheddar
1/2 C kraft fat free cheddar
1/4 C chopped onions
1/2 C egg substitute
1/3 C bread crumbs, plain
1/4 C flour
seasonings to taste
fat free sour cream
Place chicken, cheeses, onion, 1/4 C egg substitute, seasonings and about 2 tsp bread crumbs in a food processor, and process until a consistency that can form a patty.
Form patties about 2 1/2 to 3 inches wide.
Dip, one at a time, in flour, then remaining egg substitute, then remaining bread crumbs.
Spray baking sheet with pam, and place croquettes on it. Lightly spray tops of croquettes with pam and place in oven.
Bake for 20 - 25 minutes and then turn oven to low broil until tops begin to brown.
Top with sour cream, if desired.
Makes 8 - 3" Croquettes.
