Easy Cheesey Beef and Rice CassaroleSubmitted by: DIGIBEAN
IntroductionThis is a great meal to throw together in a pinch. Fits well into a low cal diet (if you stick to your portions) and its got tons of flavor. This is a great meal to throw together in a pinch. Fits well into a low cal diet (if you stick to your portions) and its got tons of flavor.
1lb of Ground Beef
1 cup of low fat shredded cheese (colby or cheddar)
4 cups of Uncle Ben's Instant Brown Rice
1 cup of ketchup
1/2 cup of brown sugar (unpacked)
1/2 cup of water
2 tbsp of margarine
2 tbsp low sodium soy sauce
2 tbsp balsamic vinegar
2 tbsp Worcestershire sauce
1 tsp Chili Powder
1 tsp Garlic Powder
1 tsp Ground Oregano
At the same time, prepare the rice as directed.
In a large mixing bowl combine all the ingredients for the sauce.
Slowly stir in cooked rice until it's well coated. Stir in beef and 1 cup of cheese until the whole mix looks uniform.
Scoop mix into a casserole pan and top with rest of shredded cheese. Cover pan with aluminum foil (to prevent cheese from burning).
Bake at 350 for approximately 15-20 minutes, or until the cheese is nice and melty.
Makes approximately eight 1.5 cup servings.
Play with the seasonings. It's really hard to screw this up if you use moderation.
Can substitute macaroni instead of rice, but it will change the nutritional content obviously.
Left overs keep well in the fridge for a few days if you put them in ziploc bags or containers.
