Introduction

My whole family loves these! Although they may seem small (considering the size of muffin we can get in a bakery) but we always add a helping of fruit or yogurt for breakfast. Yummy! Number of Servings: 12

Ingredients

    1 cup flour
    1 Tbsp baking powder
    1/2 tsp baking soda
    1/8 tsp salt
    1 cup mashed bananas
    1/4 sugar
    1 large egg
    1/2 tsp vanilla extract
    1/4 cup applesauce

Directions

Preheat oven to 350 degrees F. Grease muffin pan or line with paper muffin liners.

In medium bowl combine flour, baking powder, baking soda and salt together.

In separate bowl, combine banana, sugar, egg and vanilla extract. Blend until well mixed. Add applesauce. Slowly combine dry mixture to banana mixture. Blend well.

Scoop batter into prepared muffin cups. Bake 15-20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let cool before serving.

    This is a great recipe, the muffins are moist & tasty. But YOU MUST SIFT THE DRY INGREDIENTS or you can end up with baking soda lumps. Yuck! Sifting also makes the muffins bigger and fluffier. No need for a second bowl, just dump dry ingredients straight into the sifter and sift into the wet bowl. - 5/4/09

    Don't skip the eggs, it is protein and much needed, if you want to lighten it up use egg white substitute, you lose the fat, but you gain even more protein. SWEET RECIPE....THANKS!!!! - 4/23/09

    Try using Truvia, natural calorie-free sweetner made from stevia plant. You can get it at Whole Foods. Also, try using whole wheat flour. And make your own applesauce-it doesn't need added sugar. - 4/24/09

    Very moist, but did not seem to have enough flavor, so I added 1 tsp of cinnamon and some nutmeg. Next time might add a bit more sugar as they didn't seem quite sweet enough. - 5/24/09

    Made last night and the entire family loved them for breakfast. Turned out very moist and delicious. Used 4 bananas and ended up with 15 muffins. Next time will add a few walnuts or pecans. Will definetly bake these again! - 5/28/09

    Incredible! This is the first "low cal" muffin that I tried that I liked! I used whole wheat flour (that is all I had at the time) which makes them even better for me. I will definitely try these again. - 5/22/09

    theyre so nice! i prefer them to normal muffins becuase you dont need to ass icing (:
    i make mini ones then you can have a few, and i also use 2 bananas and no eggs as the egg isnt needed and adds extra calories

    These were awesome! I kinda screwed them up , but it turned out ok. For some reason I didn't write down sugar when I took down the recipe , so I didn't add any even though I found it odd. I added a bit more vanilla and a handful of chocolate chips and it make 12 fairly large delicious muffins. - 4/23/09

    i replaced the egg with ener-G egg replacer, omitted most of the sugar and the applesauce, and added cinnamon, allspice, and 1tbsp almond butter to make them even lower in calories. yummy but small. - 5/14/09

    These were great and so healthy! I used 1/2 c. buckwheat pancake mix and 1/2 c. white flour, and halved the baking powder/soda/salt measurements. I also used 1/2 br. sugar, 1/2 white, threw in golden raisins, then sprinkled tops with oats for visual appeal. Next time will add a little more salt. - 5/1/09

    Sounds yummy. Most muffin reciepes that have a fat as an ingredient, it can be substitued with unsweetned applesauce and it will give it the same consistency. Just a tip. - 4/26/09

    I made these this afternoon and they are very good. I did make a few changes. Subbed 1/2c WW flour and 1/2c Oatmeal. Cut the sugar to 2TB and added nutmeg and cinnamon. Even my 8 yr old loved them! I actually split a muffin and topped it with 1/2c lite ice cream and a dab of choc syrup. YUM! - 6/5/09

    I made these with a few changes: half cup oat bran for half the flour and splenda mix for sugar. A little too sweet. Next time I will use whole wheat flour/oat bran and skip the sweetener. - 6/7/09

    These were super yummy! Although, I think the recipe may be slightly off. It calls for 1 Tablespoon of baking powder and I think it should be 1 teaspoon. I made it with 1 teaspoon and it turned out just fine. Adding 1T would make the sodium content much higher. - 1/8/13

    Very good flavor for such little calories! I added 1 tsp of cinnamon and subbed 1/8 cup honey for the sugar. Also used egg beaters instead of real eggs. I cooked them for 17 minutes and they were still pretty spongey, not sure if that means they should have been cooked longer or not. - 5/16/12

    These came out fine even though I didn't have applesauce. Used lowfat vanilla yogurt in its place. Also slightly upped the salt and used a whole teaspoon of vanilla for flavor. Made some with walnuts and those were the best (but alas no longer "low calorie"). Made again with cinnamon applesauce! - 5/24/09
