Whole Wheat Cinnamon Raisin Muffins

Submitted by: MOMINMN

Introduction

I tweaked this muffin recipe to make it a little bit more healthy than the original, although you could easily reduce the fat by subsituting unsweetened applesauce for some of the butter.
The recipe also doubles easily and the muffins freeze well.

  • These were amazing! I did some minor changes to make them healthier. Instead of butter I used 1/2 cup unsweetened applesauce. I used egg whites from a cartoon since I didn't have any real eggs on hand. They were fabulous and super moist. Kids love. Threw all in bowl and mixed, no special steps. - 8/29/13
