Introduction

I based this loosely on a layered casserole my family used to like. Tried to make it a one-pot deal.

The original recipe was made in layers - rice, corn, tomatoes, onions, bacon, ground beef - and baked. Obviously, I left out the bacon.

Ingredients

    Jennie-O lean ground turkey - 1 pound
    2 cups cooked brown rice
    1 can (14.5 Oz) diced tomatoes
    1 can (15 Oz) cooked black-eyed peas, drained
    1 cup chopped onions
    1 can (11 Oz) white shoepeg corn

Directions

Start cooking rice, as it takes the longest. Brown ground turkey with onion. Add garlic, if wanted, now (not calculated in). Mix in black-eyed peas, tomatoes, and corn. Add cooked rice. Season to taste.


Makes 8 1-cup servings
